Pikelets and Pancakes to serve warm and yummy, keep them dairy free with rice milk or add jam and cream for an indulgence.
Pikelets: Take 250g of mix and add one egg, 250mls of rice milk or milk and 5 mls of vanilla, let stand for 10 mins before cooking. Spoon into hot greased pan, flip, serve, top and enjoy!
Pancakes: add more liquid until mix is a thinner consistency and covers the bottom of a hot greased pan. thinly cover the pan for a crepe or thicker for a hotcake, turn and serve. You can add blueberries before cooking and top with bacon, or squeeze lemon juice and sugar!
